i thought that i ate a lot of rice, but when i went to madagascar i realised there's liking rice and liking rice. they will use it for every meal, and not just have a little on the side but a mountain piled up on the plate. again that's something which i'm on board with, when i cook rice at home i always misjudge and cook a bit too much, but what caught me out in madagascar wasn't the quantity of the rice but the ratios. a huge mound of rice would come with three of four bits of meat, so when you've had a few spoonfuls all that remained was a huge mound of rice. after a week i realised that the brown water they would serve with the meal was actually burnt rice water which you could pour over the plate, essentially adding rice sauce to your rice. you would have thought that after three weeks of this i'd be desperate for a change, but the first meal i had when i returned home was a curry. crucially though this curry had a far more generous ratio of meat to rice.
